Herbed Chicken Salad
- 1/2 cup mayonnaise
- 2 tablespoons (30ml) cider vinegar
- 2 cloves garlic, crushed
- 3 tablespoons chopped fresh dill
- 500g skinless, boneless chicken breast fillets, cooked and diced
- 1 red capsicum, chopped
- 30g crumbled feta

- Combine mayonnaise, vinegar, garlic and dill.
- Refrigerate for several hours or overnight.
- Mix together chicken, capsicum and feta.
- Add chilled mayonnaise and mix well.
- Serve as a sandwich filling or over a bed of crisp green salad.
