Seven-Minute Icing

Ingredients
Serves: 48 

  • 2 egg whites
  • 1 pinch salt
  • 250g (1½ cups) caster sugar
  • 4 tablespoons (60ml) water
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon (5ml) vanilla essence

Directions

  1. In a bowl over a saucepan of boiling water, combine all ingredients except the vanilla essence. Beat 1 minute. Cook, beating constantly for 7 minutes or until the icing makes firm peaks.
  2. Remove from the heat and add the vanilla essence. Beat until able to spread over cup cakes.
