Why we don't use MSG/Ajinomoto Monosodium glutamate (MSG)/Ajinomoto (as it is referenced in India), which is also known as sodium glutamate, is a flavour enhancer commonly added to Chinese, Japanese, Indo-Chinese food, canned vegetables & soups, and also some processed meats. It is a man-made, laboratory produced flavor enhancing salt extracted from amino acids and was first discovered in seaweed by a Japanese Professor in 1908. MSG occurs naturally in many foods, such as tomatoes and cheeses. The European Union and the American Food and Drug Administration (FDA) have classified MSG as a food additive which is "generally recognized as safe." Though it must be listed on the label, most manufacturers don't list it as MSG they choose to use its E Number instead which is E621. MSG has been used as a food additive for over a century, but there have been many reports of adverse reactions to foods containing MSG. These reactions, also known as "MSG symptom complex" or "Chinese Restaurant Syndrome", include: Headache, Sweating, Facial pressure or tightness, Numbness, tingling or burning in the face, neck and other areas, Rapid heartbeats (heart palpitations), Chest pain and Nausea. Research has found no definitive evidence of a link between MSG and these symptoms. The researchers do acknowledge, "that a small percentage of people may have short-term reactions to MSG." and the only way to prevent this reaction is to avoid foods containing MSG. We think there is no need add MSG when cooking food with fresh ingredients and the right spices. It is for all the above reasons we do not add MSG to our food!
